Fresh cheese

It is our cheese in its purest flavor.

It's our cheese in its purest form. It has a smooth texture and tastes like fresh milk.

Fresh goat cheese is a living testament to Malaga's history, a delicacy that, with minimal processing, was a staple on the daily tables of rural people, who often kept a few goats for their families' self-sufficiency.

We are proud that our fresh cheese is a present-day favorite for many customers who always have it in their pantry.

We make it with organic ingredients: pasteurized fresh Payoya goat milk, rennet, and sea salt. This is how we achieve a soft cheese with just the right level of salt.

These cheeses are synonymous with freshness; we milk the goats, make the cheese, and the next day it's on your table.

In the past, our great-grandmother, when she went to Gibraltar to barter cheese for cocoa, coffee, or cereal, would return on a donkey with saddlebags loaded with seawater, which she used to salt and preserve the cheeses.

We love it plain, in salads, or on a skewer with quince paste.

Semi-cured cheese

The Semicurado de Crestellina is the jewel in the crown.

It's our most produced and globally captivating cheese. We have yet to meet anyone who doesn't like it; even those who claim "I'm not really a goat cheese person" become fans of our semi-cured cheese.

Its paste is exceptionally creamy, and it smells like pure butter. It's simply irresistible. You can even eat the rind.

We make it the same way our great-grandmother did.

We craft it with organic ingredients: fresh pasteurized Payoya goat's milk, lactic ferments, and salt. For better preservation, we rub its rind with organic extra virgin olive oil. We age it for 2 months.

It surprises even the most demanding palates, and its admirers include chefs and high-end restaurants. It has won numerous awards.

But the award we value most is when our customers return and make our semi-cured cheese an essential part of their diet.

Aged cheese

Our cured cheese is the best example of how our production is seasonal—as it should be!

It's our most anticipated product, available only at the end of the year, just in time for Christmas. However, if you want it year-round, we can produce it exclusively for you.

At Crestellina, we not only use natural and organic ingredients, but we also produce according to nature's cycles.

In spring, when the goats have given birth, they produce more than enough milk to feed their kids and for us to make a lot of cheese. We take advantage of this peak of milk abundance to set aside the best pieces and age them throughout spring, summer, and autumn so they are ready for winter. This period happens to coincide with when we are "short" on milk because our goats are pregnant. But thankfully, our aged cheeses are ready to leave our curing rooms so you won't be without a Crestellina on your table!

We make it with organic ingredients: pasteurized fresh Payoya goat milk, lactic ferments, rennet, and salt. We age it for approximately 8 months.

We love grating it over a pasta dish or pairing it with a good artisanal jam...a highly addictive contrast.

We don't say this ourselves – that would be tacky – but these are the kind of comments that come from the heart of those who try it for the first time. It's up to you if you want to try it or not...

We make it with organic ingredients: fresh pasteurized Payoya goat's milk and lactic ferments.

It is our raw material in its almost purest state. It has a mild flavor and a texture that is between cream and curd, a hallmark of our yogurt.

We don't sweeten it so that it is suitable for all audiences. Once at home, everyone can pair it as they prefer... with honey, jam, fruit, chocolate drops,
nuts... your imagination is the limit!

However, if you prefer us to surprise you, we also sell them combined with
our favorite homemade jams from our friends at La Molienda.
