AVAILABLE ONLY AT YEAR-END. Organic aged Payoya goat cheese from grazing goats, aged for eight months. 650g pieces at €29.80/kg, other pieces at €28.80/kg. Our aged cheese is the most anticipated treasure, available only at year-end for Christmas, although we can produce it exclusively for you throughout the year. Contact us to order yours! At Crestellina, we follow natural cycles: in spring, when the goats have surplus milk, we set aside the best pieces to age them until winter, coinciding with a milk shortage as our goats are pregnant. Made with organic ingredients such as fresh pasteurized Payoya goat milk, lactic ferments, rennet, and salt, we age this cheese for approximately 8 months. Enjoy it grated over pasta or paired with artisanal jam for an irresistible contrast.
